The Charmat Method: What is it?

The Charmat method, sometimes referred to as the Metodo Italiano or the tank method, is a well-liked technique for making sparkling wine. Compared to the conventional bottle fermentation method, this technique‘s secondary fermentation in large stainless steel tanks enables a quicker and more effective production process which makes it particularly suited for creating fresh, fruit-forward sparkling wines like Prosecco. The Charmat process preserves the natural aromas and flavors of the grapes, resulting in a crisp, vibrant wine.

Stages of the Charmat Method

  1. Primary Fermentation: Grape juice undergoes its initial fermentation with yeast, converting sugars into alcohol and releasing carbon dioxide (CO2) that escapes into the air.
  2. Blending (Optional): Different base wines made from various grapes or vineyards can be blended to create a more complex flavor profile for the final sparkling wine.
  3. Secondary Fermentation: This is where the bubbles come in! The base wine is bottled along with a specific type of yeast and a small amount of sugar. The sealed bottle traps the CO2 produced during this second fermentation, creating the signature sparkle.

  4. Aging on Lees: The bottles are stored horizontally for an extended period while resting on the yeast sediment (lees). This aging process adds complexity and richness to the flavor of the sparkling wine.
  5. Filtration and Bottling: After aging, the bottles go through a riddling process to move the lees towards the neck. Then, the lees are disgorged (removed) and a dosage liqueur (sugar and wine mixture) may be added to adjust the sweetness level before final corking and bottling under pressure.
